Simple Crockpot Salsa Chicken

The crockpot is my friend. It just makes life so much easier! I make simple crockpot salsa chicken  probably about once a week. A friend was saying today I should share how I make it with you all, so here it is!

Simple Crockpot Salsa Chicken

This is the chicken we use and have used for years. We get it from Costco. It’s not “organic” but it is hormone and antibiotic free which is enough for me (and my budget ;) It’s in the freezer section and each chicken breast is wrapped individually.

I usually make 4-7 breasts at a time depending on our needs for the week or if we are having company. This morning I made 5. The best part about this recipe? You put the chicken in while its frozen. No defrosting necessary! So you put your chicken in and then you add three things:

Water: until it covers about 1/3 of your chicken

Chicken broth: Maybe about a half cup or so. The purpose of the broth (in my mind) is to soften the chicken so you don’t need a ton and you don’t need exact measurements.

Salsa: I just pour some over the top. No measurements needed here either.

For best results, put the crockpot on low and cook about 8 hours. Can you put it on high and cook it in 4-6 hours? Yes. But I don’t think it gives quite the same result and the chicken isn’t as soft and doesn’t shred as nicely as the low and slow version :)

Once times up you just take your chicken out of the crockpot and put it in a bowl. Then take a fork and shred it up. This takes about a minute and voila! Delicious, shredded salsa chicken. I usually think of the meat as the most tedious part of cooking so I love having this done for me and so easily too.

You might be asking yourself, “but what meals do I make with it?” Anything! Some ideas would be: tacos, enchiladas, chicken salad (add mayo and you’re good to go), whatever you like! Today I just put some on a plate and ate it with an apple, cheese and rice chips. It was delish!

    Low cooked crock pot chicken is so delish! I need to try this way. Usually I just put an entire jar of salsa and sometimes some seasoning. Shredded chicken is pretty much the only way I like my chicken!

    I made this on Sunday after reading your post and it turned out so good! I had chicken tacos the first night and a chicken salad the next day for lunch!! The kids had it with rice and loved it! Thanks for the recipe friend!!
